Ricotta pumpkin spice mousse
This is a great snack, that a friend of mine recommended a few years back. An easy way of getting more veggies into your diet without even noticing!
It is easier making this recipe so you´ve got for the whole family or so you’ve got a snack for a few days as the baking of the pumpkin takes a while!
For 1 person you’ll need:
100 g pumpkin
100 g ricotta cheese
cinnamon to taste
How to prepare
I used a pumpkin that was pre cut, but you kan buy a whole one.
Cut the pumpkin in half and discard the stem section and stringy pulp. In a shallow baking dish, place the two halves face down. Bake in a preheated 190 degrees C (375 degrees F) oven for about 1 ½ hours for a medium-sized pumpkin, or until tender. (mine was 500g and took 1 hour).
Let cool and then use a spoon to scrape out the pumpkin flesh.
Blend with a handblender until smooth.
Mix in ricotta with a spoon.
